Brushchetta

Today we are going to a family party and I was asked to bring an appetizer. My garden is underway and I really wanted to use something fresh. My tomatoes are not ready yet but my basil is doing great. I took a ride down to Campbell’s, our local farm stand to pick up some fresh tomatoes. Brushchetta it is and oh my is it delish! Enjoy!!

Brushchetta
8 Large Tomatoes( the core and seeds removed)
1 Large handful of fresh basil
Salt and Pepper
3-4 Cloves of Garlic
3 oz Fresh Mozzarella Cheese
1 Tbsp Balsamic Vinegar
2 Tbsp Olive Oil
1 Large Loaf Italian Bread

Dice the tomatoes and mozzarella cheese and add to a large bowl. Chop the fresh basil and add to the tomatoes and mozzarella. Mince the garlic and add. Add the balsamic vinegar, olive oil, salt and pepper, stir to mix well. Let set.

Slice the italian bread and coat with olive oil. Toast the bread in the oven at 475 degrees until golden brown flipping to crisp up both sides.

Serve the brushchetta with the bread and enjoy!
